Microwave Sponge Recipe
Step 1
Sift dry ingredients together

Add wet ingredients mix till combined

Pass through a chinois and add into an ISI, charge, shake very well and chill for a minimum 1 hour

Cut a wax-lined cup with vent holes at the base (pairing knife works well)
Step 5
Dispense batter into the cup (about 2/3rds the way up) and immediately microwave

Times will vary depending on the microwave. Ultimately you're looking for it to soufflé and set. Usually, around 1 min 15 seconds; depending on the amount fired

Let cool slightly before extracting
Step 8
The softer the cook the faster the cake collapses. Conversely, the longer you go the dryer it gets but will hold its shape better.
